Here you have it, folks. These are my top three on-the-go, go-to recipes for travelling. These are easy as all hell. Hence the title, Easy Travel Recipes.

You can cook up these delectable dishes anytime, and the ingredients can be sourced almost anywhere globally. For a quick, easy bite, you can’t go wrong! Save these simple recipes for your next road trip or adventure abroad, you can’t go wrong. Buon appetito amici!

Vegetarian Burritos

Ingredients:

  • Corn tortillas

  • Guacamole (smashed avocado, tomato, onion, lemon juice, cilantro, salt)

  • Mozzarella cheese or feta cheese

  • Shredded red cabbage

  • Red or black kidney beans

  • Corn

  • Red onion

  • 2 cloves of Garlic

  • Chilli

  • Salt and pepper

  • Cumin

  • Paprika

  • Turmeric

  • Lime or lemon

  • Cilantro

  • Red salsa sauce (mild)

  • Olive oil (1 tablespoon)

Optional:

  • Sour cream

  • Pico de gallo (tomato, onion, red peppers, lime juice, cilantro, salt and pepper)

  • Herbs and spices

  • Sweet potato

  • Brown rice

Method:

  1. Gather all the ingredients together. Prepare the guacamole and shred the cabbage. Chop garlic, onions, and cilantro.

  2. Add olive oil, onion, garlic, beans, herbs, and spices to a frying pan. Stir for 5 minutes or until cooked. Then, turn off the heat.

  3. Place corn tortillas in the oven for a couple of minutes.

  4. Remove corn tortillas, and add in guacamole, tomato, red cabbage, corn, red salsa sauce, and the fried mix to your taste.

  5. Serve with freshly squeezed lime or lemon. Wrap them up, and enjoy!

Eggplant Parmigiana

Ingredients:

  • 2 large eggplants

  • Mozzarella cheese

  • Parmesan cheese

  • Bechamel sauce

  • Tomato sauce

  • Basil

  • Salt and pepper

Optional:

  • Onion

  • Garlic

  • Tomato

Method:

  1. Slice eggplant into thin, 1cm slices. Prep the eggplant by sprinkling it with salt and leaving it to sit for about half an hour to one hour.

  2. Heat the frying pan, then add olive oil. Once hot, add the slices of eggplant and flip until they turn to a light, golden-brown colour. Alternatively, you can roast the eggplant instead of frying it.

  3. Add a light layer of tomato sauce and then a layer of eggplant in a large baking dish. Add béchamel sauce, and sprinkle the mozzarella cheese lightly on top. Repeat this combination two more times. Sprinkle with mozzarella cheese, then top it off with freshly cut basil and Parmesan cheese.

  4. Bake it in the oven for around 20-30 minutes or until it turns light golden brown. Remove once cooked, and serve while hot.

Vegetarian Thai Noodles

Ingredients:

  • Rice noodles

  • Coconut cream/milk

  • Tofu

  • Red capsicum

  • Green capsicum

  • Onion

  • Garlic

  • Tomato

  • Lime or lemon

  • Chilli flakes

  • Cilantro

  • Cumin

  • Turmeric

  • Paprika

  • Salt and pepper

  • Olive oil

Optional:

  • Snow peas

  • Broccoli

  • Zucchini

  • Ginger

  • Sesame oil

  • Soy sauce

Method:

  1. In a large pot, boil hot water and place the rice noodles inside. Once cooked, turn off the heat and allow them to soak for 20 minutes. Drain, and then rinse with cold water.

  2. On a chopping board, slice the tofu into finger-sized pieces. Then, chop up all of the vegetables.

  3. In a large frying pan, heat up the olive oil. Add in the tofu, and cook for a few minutes until it turns light, golden brown. Remove the tofu from the pan and place on the side.

  4. Add the remaining vegetables to the fry pan and continually stir until cooked.

  5. Add in herbs and spices, and then the coconut cream.

  6. Once the coconut cream starts to bubble, add the tofu and rice noodles back into the pan. Stir until all ingredients are combined. Serve while hot.
